The following recipe is designed to be eaten over lettuce, but you may find you enjoy it just as much over tomatoes. Instead of crabmeat, you can also make this sald with any white fish, shrimp, or lobster.
- 1 cup cooked crabmeat
- 1 tablespoon lemon juice
- 1 tablespoon thinly sliced fresh basil
- 1 tablespoon chopped flat-leaf parsley
- Sea salt
- Freshly cracked black pepper
- Extra-virgin olive oil
- Lettuce leaves
Combine all ingredients except lettuce in a bowl and adjust the seasonings. Serve over lettuce leaves.
