Recipe: Pureed Butternut Squash for Thanksgiving

Pureed Squash

Ingredients:

2 cups peeled, cubed butternut squash
1 tablespoon light butter
½ teaspoon cinnamon

Directions:

Place squash in a microwave-safe bowl. Add enough water to cover the squash halfway. Cover with a paper towel and microwave on high until the squash is soft, about 4 to 5 minutes. Drain the squash and transfer it to a food processor. Add butter and cinnamon and puree until smooth.

Serves 2
